A quick recipe with satisfying results!!!
ROASTED PEACHES with vanilla ice cream ..my mother’s style..
serves 4 to 6
4 fresh ripe peaches, cut in half, pits removed
2 Tbsp brown sugar
1 Tbsp butter
4 Digestive biscuit crumbled
Vanilla ice cream
1. Preheat the oven to 180 degrees C.
2. Place the peaches cut-side up in a baking dish. Fill each peach cavity with a bit of butter, brown sugar and the biscuits crumbled.
3. Bake 35 to 40 minutes, until the flesh has softened and the tops are browned.
4. Serve warm, with ice cream.
